What is there to do in Colorado Springs aside from seeing the mountains and falls?

We like to eat, drink, and explore the city’s local watering holes. But for those of you who aren’t avid beer-drinkers, you can find more upscale cocktail bars and fine restaurants in downtown Colorado Springs. Looking for the perfect Colorado cocktail? Try these three favorites:

 

The Aviation

The Aviation is actually a New York born cocktail, but we love it just as much in Colorado Springs. It’s trademark is the pale bluish-purple color, made with Crème de Violette. The Aviation is both beautiful and delicious, and you can find some of the best-crafted right here in Colorado Springs. You can even make them at home and “wow” your house guests and friends.

At Home Recipe:

Mix 2 ounces of Gin, ½ ounce of maraschino liqueur, ¼ ounce of Creme Yvette, and ¾ ounce of lemon juice. Shake well, then strain into a glass and serve.

Where to Get It Locally:

Brooklyn’s on Boulder is arguably one of Colorado Springs’ best hidden gems. Disguised as an upscale haberdashery, this bar has some of the finest cocktails and desserts in town. The setting is very small and intimate with few a tables and a bar, but it’s worth the trip if you can find it. As a speakeasy, it’s “hidden” off Tejon and Boulder. The Lemon Drop

The Lemon Drop is a sweet and sour treat and cocktail menu staple. It’s a Vodka-based drink with a liquid candy flavor that many people absolutely love. The sour kick isn’t for everyone, but that’s why we rim the glass with sugar! Try making your own Lemon Drop using the recipe below, or try substituting the fresh lemon with limoncello. 

At Home Recipe:

Chill martini glass prior to mixing. Pour 1 ½ ounces of Vodka, ½ ounce of Triple Sec, ¾ ounce of lemon juice, 5 ice cubes and 1 teaspoon of superfine sugar into mixer and shake. Run a lemon twist around the edge of your chilled glass, and coat the rim with superfine sugar (pour sugar on flat surface and “dunk” rim). Strain and serve.

The Coffee Martini

Colorado Springs is known for its camping enthusiasts. And as most of us know, a camper can’t go wrong by mixing a little Bailey’s Irish Cream into their coffee. Hiking through the mountains is much better with a little bit of caffeine and sweet cream to keep you going! If you want a more sophisticated spin on this outdoor classic, try sampling a coffee martini. They’re relatively easy to make and add a boost of energy to your classic martini.

At Home Recipe:

Mix 2 ounces each of Vodka, coffee liqueur, and ⅔ ounce of fresh coffee (from a french press or cold brew), and shake in your cocktail mixer. Add ice to your glass, and pour the mix over. To garnish, add three whole coffee beans on top, and serve.

Where to Get It Locally:

On North Tejon Street, you can find The Rabbit Hole, an underground bar that serves some of the best sweet cocktails and Colorado beers in town. Their signature “White Rabbit,” made with Vanilla Vodka, coconut rum, cream, and marshmallow will keep you coming back for more. Plus, they serve an even sweeter version of the Coffee Martini that will definitely keep you up all night long.
