Manitou Springs is famous for its naturally sparkling mineral springs, and there’s no better way to enjoy them than mixed in a cocktail! Conveniently located just outside the front door of this tasty burger and pizza restaurant, The Cheyenne Spring provides the soda for Creekside Cuisine’s Adult Lemonade. Mixed with vodka, you can enjoy this light and refreshing drink in a variety of flavors including peach, strawberry, and traditional lemon.
Note: This restaurant has an ideal creek-side covered dining patio that offers a fantastic view into the hustle and bustle of downtown Manitou Springs.

Sachet up to the bar at this Chicago-style steakhouse for one of their limited-time signature summer cocktails. We recommend the Pomegranate Bling, which combines Van Gogh pomegranate vodka, house-made grenadine, cranberry juice, and Prosecco with a fresh berry garnish. Fruity and effervescent, this drink will get your creative juices flowing as you reflect on your summer adventures and consider how you’ll paint your future.

Skip the Guinness and opt for a soft and light aperitif as you wind down summer at this local pub and restaurant. The Lillet White Spritzer, as its name would suggest, is predominately made with Lillet, a sweet white French wine, then is mixed with raspberry liquor, a splash of club soda, and garnished with a lemon twist. Though this drink is a bit on the fancy side, you’ll fit right in once you join in with the Irish sing-alongs. We’re all Irish at Jack Quinn’s!

Hit up this urban bar with an impressively creative and delicious menu for a cocktail that’ll make you wonder why you didn’t bring your velvet coat and a cigar. We recommend the Wood Riddled Sting, which combines Woodford Reserve, orange juice, agave syrup, Peychaud’s bitters, and last but not least, hot sauce for a little extra zing. During happy hour, pair this drink with the Bar Nibs, your pick of pickled vegetables, buttered nuts, French fries, or olives.
Note: Limited outdoor dining is available along Tejon Street where you can enjoy the warming sun.

Nestled alongside Poor Richard’s Restaurant, which serves thin crust pizza, a toy store, and a bookstore, Rico’s Café is the quintessential local hangout spot. For the end of summer, we recommend their Vlad to Meet You, a twist on a White Russian but with vanilla vodka, Kahlua, and cream, then topped with homemade whipped cream and fresh blueberries. The prefect casual date location, come on a Thursday, Friday, or Saturday night for live music, typically acoustic, folk, or bluegrass.
Note: Dine on the back patio, a shared space between Rico’s Café and Poor Richard’s Restaurant. With a fountain, Italian villa mural, and a pergola, this is an oasis in the heart of downtown Colorado Springs.

Let’s be honest…Spice Island Grill has cool summery cocktails all year round! No need to travel to Jamaica to try some of their flavorful jerk chicken (recently featured on Diners Drive-Ins and Dives) and traditional island flavors. For your cocktail, don’t miss the Jamaican Sunrise, a blended cocktail of mango nectar, pineapple juice, coconut rum, and a splash of grenadine.
Note: Spice Island Grill has a covered side patio that offers private dining on bistro tables. Listen to the passing trains in this hideaway just off the main road in downtown Colorado Springs.

We know that Savory Spice Shop doesn’t actually serve cocktails, but they are the best place to stock up on the ingredients you’ll need to make your own! Add a little sizzle to the final dog days of summer with a spicy Bloody Mary made with The Real Dill’s Bloody Mary Mix and your favorite vodka. Have no shame when it comes to your accouterments – from bacon to celery to even chicken drumsticks, we’ve seen it all! Savory Spice Shop recently added other ways to concoct your own cocktail including make-it-yourself flavored gin and moonshine.
